Debbie, et al.. Pumpkin; was: caramelized butternut squash

I have had the lighter color " baking pumkin " (not so orange, more tan,

maybe?) but never have I cooked or eaten the bright orange one's typically

seen as jack-o-lanterns. Can these be cooked and eaten the same way?
