Crunchy raw broccoli and crisp apples make for a light

and refreshing dish after being coated with a quick

sweet and sour dressing. I was a little worried that

the 6 tablespoons of cider vinegar would be a little

overpowering, but the sweetness from sugar and the

tangy Dijon made sure it was kept in check. I used

Granny Smith apples as I wanted a little extra burst

of tartness. I think this would be a perfect dish to

bring along on a picnic or a last minute side for

entertaining.

Broccoli and Apple Salad (Adapted from CL)

 

2 1/2 tablespoons granulated sugar

6 tablespoons apple cider vinegar

2 tablespoons Dijon mustard

1 tablespoon canola oil

1/2 teaspoon freshly ground black pepper

1/4 teaspoon salt

20 ounces fresh broccoli florets, chopped into 1 to 2 "

pieces

1 1/4 cups chopped crisp apples

1/4 cup finely minced sweet onion

 

In a large bowl, whisk together sugar, vinegar,

mustard, canola oil, pepper and salt.

 

Add chopped broccoli, apples and onion. Toss well to

coat.

 

This salad sounded to so fresh, easy and good!

This is from a blog I get daily. There are so many

blogs to choose from. There are all kinds; chocolate

lovers, veggie folks, baking, just brownies!, one from

Canada, Salads, and just general kitchen adventures.
