These muffins are great as a nutritious midday snack. 1 egg lightly beaten 1 cup milk 1 cup mashed ripe bananas ( about 3 medium ) 1/2 cup granulated sugar 1/4 cup vegetable oil 1 tsp. vanilla 1 cup all-purpose flour or whole wheat flour 1 cup oat bran 2/3 cup raisins 1 tsp. each baking soda and baking powder 1. Preheat oven to 400F. Lightly grease or spray nonstick pan with nonstick cooking spray. 2. In bowl, combine egg, milk, bananas, sugar, oil, and vanilla; mix well. 3. In another bowl, mix together flour, oat bran, raisins, baking soda and baking powder; stir into egg mixture, only until combined. 4. Spoon into prepared muffin pan. Bake for 20 to 25 minutes or until tops are firm to the touch.
