This is a great recipie, one of our favorites around here! We make it

year round

 

Dairy Free Pumpkin Pie

3 eggs

1/2 c raw sugar

1/2 c maple syrup

1 1/2 c coconut milk

1 1/2 c pumpkin pureed

1/2 tsp each salt, cinnamon, & ginger

pinch of cloves

1 9in pie shell

 

combine eggs, sugar and syrup. Wisk in the remaining ingredients until

well blended. Pour into shell. Bake @ 375 for 1 hour or until set
