Papaya Relish

 

1/2 cup red onion, chopped

1 red chile, small, seeded and finely chopped

1/4 cup fresh mint leaves, snipped

1 papaya, pared, seeded and cut into 1/2 inch cubes

1/2 cup red bell pepper, chopped

1 tbsp. vegetable oil

2 tbsps. lime juice

 

Cook onion, bell pepper and chile in oil over medium

heat, stirring frequently, until tender. Stir in

remaining ingredients. Cover and refrigerate until

chilled, about 2 hours.

Makes 3 cups of relish.
