Guest guest Posted October 4, 2006 Report Share Posted October 4, 2006 Potato Leek ad Sorrel Soup This soup wasserved in the Clinton White House. I looks like a good recipe to me. It seems understated. Does anyone know where to get sorrel or what to substitute for it instead? Thanks 1 Tbsp. butter 2 bunches leeks, white part only 4 garlic cloves 4 shallots, peeled and sliced 2 sprigs thyme 2 bay leaves 4 medium potatoes, sliced' 1 1/2 qts. chicken stock (of course I woud use veggie stock) 2 bunches sorrel leaves 1 cup spinach, blanched andchopped (leave out the E-coli) Salt and pepper to taste Cream to finish (optional) Melt the butter in a medium sizsed soup pot over medium heat. Sweat the leeks, shallots, garlic and herbs until translucent. Add the potatoes and cook for a few minutes. Pour in the broth. and reduce the heat to simmer for a half an hour. Puree in blendr. Add the sorrel and spinach: then pulse blendr a few more times to mix. Pass the mixture through a fine chinois or food mill. Season with salt and pepper to taste.
