Guest guest Posted October 2, 2006 Report Share Posted October 2, 2006 Mashed Parsnips with Brown Sugar 1 pound fresh parsnips, peeled and sliced margarine to taste salt and pepper to taste 1/4 cup brown sugar or 1/4 cup maple syrup or honey 2 tablespoons finely minced parsley optional Steam or boil parsnips in a saucepan in 1/2 cup of slightly salted water until each slice pierces easily. (Microwave in a microwave-safe covered container for 6 to 8 minutes for better flavor). Drain water. Add all remaining ingredients and stir and blend to desired consistency. Either lumpy or smoothly mashed, fresh parsnips prepared this way are distinctive and incredibly delicious. Serves 4. Messenger with Voice.
