We made these over the weekend.

You guys will love 'em.

 

Caramelized Banana Bread Pancakes

 

Pancake Ingredients:

1 1/2 cups all-purpose flour

1 teaspoon salt

3 tablespoons sugar

1 3/4 teaspoons baking powder

2 eggs-separated

3 tablespoons butter-melted

1 1/4 cups milk or soy milk

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon vanilla

1/2 teaspoon ground ginger

2 bananas-sliced

1/2 cup walnuts-chopped

Banana Ingredients:

3 tablespoon butter

3 bananas-sliced on a slight horizontal

1/8 cup brown sugar

1/8 cup white sugar

1/2 teaspoon nutmeg

 

 

Makes 8 pancakes

Directions:

Lightly spoon flour into dry measuring cups, and level

with a knife. Combine flour in bowl with salt, spices,

sugar and baking powder. Combine egg yolks, butter,

vanilla, and milk. Quickly mix ingredients

together-batter will be lumpy. Whip egg whites and

gently fold into mixture. Gently fold in bananas,

walnuts (reserve 1 tablespoon of nuts for garnish).

Ladle onto griddle pan on low-medium heat. Cook until

bottom is golden brown. Flip, repeat. Top with nuts

and caramelized bananas. For a special treat, try

serving with warmed applesauce.

 

Caramelized Bananas:

 

Melt butter in non-stick saucepan over medium heat.

Add sugars and heat until they dissolve. Add bananas

and sauté until mixture thickens and bananas start to

brown. Optional — add 2 tablespoons coffee-flavored

liqueur and cook 3-5 minutes until thick.
