Since it is pumpkin season, and so many of us have

mentioned some sort of pumpkin soup, I just read this

one. I have not tried it but thought I would offer it

and its location for your reading pleasures.

 

JD's Pumpkin Soup-6 servings

For extra flavour sometimes the author roasted the

pumpkin before adding it it stated.

 

 

1¼ hours 15 min prep

2 lbs pumpkin

1 lb potatoes

1 large onion, diced

1 large green bell pepper

2 stalks celery, chopped

3 bay leaves

1 teaspoon dried thyme

1 tablespoon curry powder

1 tablespoon veggie stock

1 liter water (approx)

 

1. Peel & dice pumkin and potaoes roughly.

2. In a large stock pot bring water to the boil, then

add pumpkin, potatoes, onion, celery, bell pepper,

bayleaves and thyme.

3. Simmer until all the vegetables are cooked and

soft.

4. Add the curry powder and stock powder and

boil a further 10 minutes.

5. Remove bay leaves and puree the soup, until there

are no lumps.

6. Replace bay leaves, season to taste and simmer

another 15 minutes.

7. Remove bay leaves before serving.

8. Serve with drizzled cream or parmesan cheese.
