Hearty Oat And Cornbread

 

1 cup oats, quick or old fashion

1 cup cornmeal

1/2 cup flour, all purpose

1 tbsp. baking powder

1/4 tsp. salt, optional

1 soy milk

1/2 cup corn kernels

2 tbsps. applesauce

2 eggs or substitute to equal 2 eggs

2 tbsps. onion, finely chopped

 

Heat oven to 425 degrees. Spray an 8 or 9 " square baking pan with nonstick

spray.

In a medium bowl, combine dry ingredients.

Add remaining ingredients that have been combined in a small bowl, mix well.

Spread evenly into prepared pan.

Bake 20 to 25 minutes or until edges are lightly browned.

Serve warm.

Makes 8 servings.

AJ,I love the looks of this recipe and can't wait to try it. I am

assuming that the '1 soy milk' is 1(one) cup of soy milk.

Thanks for this different cornmeal-oats combo.
