Guest guest Posted October 1, 2006 Report Share Posted October 1, 2006 Vanilla Salted-Peanut Cookies (Adapted from BH & G) 12 tablespoons spectrum organic natural shortening 2 cups packed brown sugar 1/2 teaspoon baking soda 1/4 teaspoon salt 2 eggs 1 tablespoon vanilla 1 1/2 cups all-purpose flour 2 cups rolled oats 1 cup dry roasted peanuts 1/2 cup golden raisins 1/2 cup flaked coconut Preheat oven to 375 In a large mixing bowl, mix shortening to soften - about 20-30 seconds. Add in brown sugar and cream together until light and fluffy. Beat in baking soda and salt. Mix in eggs and vanilla. Add flour and beat just until combined. Using a stiff wooden spoon, stir in the oats. Add peanuts, raisins and coconut - stirring to mix well. Using a tablespoon cookie scoop, drop dough onto parchment lined baking sheets. Bake until the edges being to brown - about 8-11 minutes depending on the size and how crisp you like your cookies. Remove and let sit on the baking sheet for a couple minutes before moving to a wire rack to cool completely. Makes about 46 cookies " FeedBlitz " <feedblitz This is such a great site.
