I don't know why they aren't as good as my friend Bill's we use the same recipe. Oh, also peaches. Cherries I freeze for pie. (DH's family has an orchard in upstate NY. Guest guest Posted October 1, 2006 Report Share Posted October 1, 2006 Amy, 'dabbling in pickles ' is a fun way to put it. I have a suggestion. Make sure the pickles are very cold to start with by soaking them in ice water and canning salt for several hours. We kept ours in a cold fridge so didn't need to cool them..This makes them crispy. Pack them cold and immediately pour in the boiling brine and process in the canner. My friend has the neatest cherry pitter I have ever seen. It is an antique, but works perfectly.
