Barley-Rye Pancakes (from " Stevia Sweet Recipes " by Jeffrey Goettemoeller) 1/4 tsp stevia powder 1/2 cup rye flour 1 1/2 cups barley flour 1 TBL baking powder 1/2 tsp cream of tartar 1/8 - 1/4 tsp salt 2 eggs 2 TBL oil 1/2 cup soymilk (Goettemoeller uses skim milk) 1 1/4 cups water Stir dry ingredients together. In separate bowl, mix all liquids and then combine the two mixtures. Heat the griddle. Ladle about 1/3 cup batter onto griddle for each pancake. Turn when bubbly on top and underside is browned.
