Guest guest Posted December 26, 2006 Report Share Posted December 26, 2006 Caramel Rice Pudding 3 cups cooked white rice 1/2 cup dried cranberries or cherries or dried, chopped apricots 1 tsp pure vanilla 1 can (14 oz) sweetened condensed milk* 1 can (12 oz) evaporated milk* 1 TBS brown sugar 1 tsp cinnamon Spray inside of 2 to 3.5 quart crockpot with cooking spray (or grease with butter). Mix all ingredients except sugar and cinnamon in crock. Cover and cook on LOW 3 to 4 hours or until liquid is absorbed. Stir pudding. Sprinkle pudding with sugar and cinnamon. Serve warm. Makes 8 servings NOTE: Reduced fat sweetened condensed milk and skim (fat free) evaporative milk may also be used. Per Serving (made with regular sweetened condensed & evaporative milks): 385 calories; 8 g fat; 30 mg cholesterol; 140 mg sodium; 68 g carbohydrate; 1 g dietary fiber; 11 g protein.
