This recipe contains lots of ingredients that will help to keep you happy and healthy during this time of the year. 1 bunch kale - leafy green or red 1/2 leek, rinsed and trimmed, thinly sliced 3 cloves garlic, minced 1 Tbsp freshly minced ginger 1 Tbsp Miso (I use South River's Dandelion Leek, but try any!) 1 tsp cayenne pepper 1 tsp prepared wasabi 2 Tbsp tamari freshly ground pepper 1 Tbsp sesame oil --- stem and rinse kale, tearing it into bite-sized pieces. Steam for about 10 to 15 minutes (depending on toughness). In skillet, heat sesame oil. Add leaks, garlic and ginger. Stir approx. 2 minutes. Add steamed kale and continue tossing until thoroughly mixed. In a small dish, mix miso, wasabi, and 1 Tbsp tamari. Mix well. In skillet, add 1 Tbsp tamari, cayenne, and ground pepper. Stir well. When kale is wilted, add in miso mixture. Stir in and turn off heat quickly. Serve with a main dish as vegetable serving, chill and eat with eggs, or anything else you like.
