Avocado Salad

 

1 bundle of spinach, washed thoroughly and drained well

2 ripe avocados, sliced or diced

2 TB extra virgin olive oil

2 TB lemon juice

Salt and pepper

 

1. Whisk olive oil, lemon juice, salt and pepper in a salad bowl to make

dressing.

 

2. Add spinach and avocados with the dressing and toss lightly.

 

Serves: 3.
