Guest guest Posted December 18, 2006 Report Share Posted December 18, 2006 Cucumbers with Dill ~~~Marinade~~~ 1 cup water 1/4 cup red or white wine vinegar 2 tsp. honey 3/4 tsp. salt (optional) 1/4 tsp. hot pepper sauce (optional) 2 large unpeeled cucumbers, thinly sliced 3/4 cup red onion, thinly sliced 1 TB chopped fresh dill or 1 tsp. dried dill Fresh dill sprigs for garnish 1. To make the marinade: In a large glass or ceramic bowl, combine the water, vinegar, honey, salt, and hot pepper sauce Mix well. 2. Add cucumbers, red onion, and chopped dill to the marinade. Gently toss until ingredients are well combined. 3. Cover bowl with plastic wrap. Let stand for at least 1 hour at room temperature or refrigerate for up to 4 hours. 4. Just before serving, toss well. Using a slotted spoon, place the cucumbers on serving plates. Garnish with fresh dill sprigs. Serve immediately. Serves: 6.
