Guest guest Posted December 9, 2006 Report Share Posted December 9, 2006 Lettuce Salad with French Dressing 1/2 large head iceberg lettuce, chopped 1 cup carrots, peeled and shredded 1 cup cherry or grape tomatoes ~~~Dressing~~~ 2 TB white wine vinegar 2 tsp. sugar 1 TB tomato paste 2 TB fresh tarragon leaves, chopped OR 2 tsp. dried 1/3 cup extra virgin olive oil Salt and ground black pepper, to taste In a large salad bowl, combine vinegar and sugar, then whisk in tomato paste. Add tarragon leaves and whisk in oil in a slow, thin stream. Add lettuce and top with carrots and cherry tomatoes. Season dressing with salt and pepper, to your taste.
