Guest guest Posted December 10, 2006 Report Share Posted December 10, 2006 Scandinavian Christmas Torte Submitted by: Thomas Ellefson Recipe for: 10 servings Ingredients: 1 cup granulated sugar 1 cup butter, softened 2 eggs 1/2 cup sour cream 1 tsp vanilla 4 1/2 cups all purpose flour 2 tsp baking powder 1 1/2 cup seedless raspberry jam 1 pkg 3-oz. package cream cheese 1 cup confectioner's sugar Procedure: 1. In large mixing bowl, cream sugar and butter. 2. Add eggs, sourcream and vanilla. Blend well. In medium bowl, combine flour and baking powder. 3. Add slowly to dough. Chill 1 hour. Roll out to 1/4-inch thickness on floured board. 4. Cut into five or six 8-inch diameter rounds. 5. Bake in preheated 325 degree F oven on cookie sheets which have been prepared with non-stick spray until lightly browned; about 6-7 minutes. 6. Cool on racks. In small bowl, combine jam, cream cheese and confectioner's sugar. 7. Spread evenly on each torte layer. Stack on cake plate. 8. Decorate with fresh mint leaves and ripe raspberries, if desired.
