Guest guest Posted December 8, 2006 Report Share Posted December 8, 2006 Cocoa Gingerbread Star Cookies Servings: 30 Ingredients: 1/2 cup Dark molasses 1/4 cup Diet margarine 1 1/4 cups All-purpose flour 3 tablespoons Unsweetened cocoa powder, Dutch processed 1/4 teaspoon Baking powder 1/2 teaspoon Ground ginger 1/4 teaspoon Ground nutmeg Non-stick butter-flavored cooking spray Directions: Recipe by: Skinny Chocolate - ISBN Place molasses and margarine in small saucepan over medium heat and bring to boil. Cool. Pour mixture into mixing bowl or bowl of electric mixer. Sift together flour, cocoa, baking powder, ginger, and nutmeg. Blend into molasses mixture. Gather dough into ball; cover with aluminum foil. Refrigerate 3 to 4 hours. Divide dough in half. Roll it out on lightly floured board. Cut out cookies, using a " star " cutter or other pattern of your choice. Preheat oven to 375 F. Spray non-stick cookie sheet, Place cookies on sheet 1 1/2 inches apart. Bake cookies in center of oven 8 to 10 mins. Cookies are done when just firm and beginning to brown. Cool in pan; remove with spatula. Store in airtight container. NOTE: you can add dried currants to batter if you wish.
