Guest guest Posted December 4, 2006 Report Share Posted December 4, 2006 I test made this tonight (I cook for a mom and a very fussy child who pretty much only likes " white food " ) and it came out really nicely. I would add some spices to punch up the flavor, but for a kid (or the picky eaters in all our families!) it's great as is. 1 med white potato, cut into bite-sized chunks 2 cups cauliflower, cut into bite-sized chunks 1 med red bell pepper, cut into bite-sized chunks 1/2 small white or Spanish onion, sliced VERY thin 1 Tbsp EVOO 1/2 tsp garlic powder Salt and freshly ground pepper, to taste 2 Tbsp skim or reduced-fat milk (didn't try soy, but don't see why not) 1/4 cup Parmesan cheese 2 Tbsp minced fresh parsley for garnish Preheat oven to 400degrees. Toss veggies and potatoes with oil and seasonings. Layer in 9-inch baking pan. Drizzle milk evenly over the top and sprinkle with cheese. Cover tightly with foil. Bake 40 minutes or until tender.
