I would add some spices to punch up the flavor, but for a kid (or the picky eaters in all our families!) it's great as is. 1 med white potato, cut into bite-sized chunks 2 cups cauliflower, cut into bite-sized chunks 1 med red bell pepper, cut into bite-sized chunks 1/2 small white or Spanish onion, sliced VERY thin 1 Tbsp EVOO 1/2 tsp garlic powder Salt and freshly ground pepper, to taste 2 Tbsp skim or reduced-fat milk (didn't try soy, but don't see why not) 1/4 cup Parmesan cheese 2 Tbsp minced fresh parsley for garnish Preheat oven to 400degrees. Toss veggies and potatoes with oil and seasonings. Layer in 9-inch baking pan. Drizzle milk evenly over the top and sprinkle with cheese. Cover tightly with foil. Bake 40 minutes or until tender. I remember when I was first starting out on my own and learning how to cook in the 80s, and I had made some homemade calzones from the recipe in the Enchanted Brocolli Forest cookbook, and I did NOT like them due to being able to taste so strongly the flavor of the olive oil. Now I love the stuff!
