Guest guest Posted November 24, 2006 Report Share Posted November 24, 2006 Hummus-Veggie Wraps Yield: 4 servings Source: " The Complete Diabetes Prevention Plan " Ingredients 4 WW flour tortillas (8 to 9-inch rounds) 1 C hummus 1 small carrot/shredded 2 slices red onion, separate into rings 12 thin slices peeled cucumber 16 young spinach leaves or 1 cup alfalfa sprouts Warm tortillas according to package directions. Lay on flat surface, spread lower half of each tortilla with 1/4 cup of hummus. Top hummus on each tortilla with a quarter of the carrots, onion rings, cucumber slices, and spinach or sprouts, leaving 1-1/2 inch margin on both sides. Fold right and left margins in, then roll tortilla from the bottom to enclose filling. Cut each wrap in half and serve immediately.
