Greek Salad

 

6 romaine lettuce leaves, torn into 1-1/2 " pieces

1 medium cucumber, peeled and sliced

1 medium tomato, chopped

1/2 cup red onion, sliced

1/3 cup crumbled feta cheese

2 TB extra virgin olive oil (EVOO)

2 TB lemon juice

1 tsp. dried oregano

1/2 tsp. salt

   

1. Combine lettuce, cucumber, tomato, onion and cheese in large serving bowl.

 

 

2. Whisk together oil, lemon juice, oregano and salt in small bowl. Pour over

lettuce

mixture; toss until coated. Serve immediately.

 

Serves: 6.

Per serving = Calories 71, Calories from Fat 68%, Total Fat 6 g, Sat Fat 1 g,

 

Cholesterol 4 mg, Carbs 5 g, Fiber 1 g, Protein 1 g, Sodium 249 mg.
