I made this soup for lunch today and it's yummy. This recipe makes about 2 servings. Cream of Celery Soup 1 T. olive oil 1 T. butter 1/2 onion, sliced 2 garlic cloves, chopped 2-3 stalks celery, diced (including leaves) 2 cups vegetable broth 1/2 cup cream (or half & half) salt and freshly ground black pepper, to taste Heat the olive oil and butter in a saucepan, over a medium heat. As the butter begins to melt, add the sliced onion and garlic, and sauté for 2-3 minutes. Add the diced celery, and continue cooking for 1-2 minutes. Pour in the vegetable broth, then lower the heat to a simmer, for 10-12 minutes. Remove from the heat, pour in the cream. Season with salt and pepper.
