I buy different veggie burgers, veggie chili, salad mixes, hummus, or vegetarian soups, and sometimes make protein shakes. Some people open up 3 or 4 different kinds of canned veggies (keep the remainder in the fridge) and make a plate of veggies with a veggie burger. A grain, such as quinoa, is a good source of protein and it cooks fast. I am sure that lots of people will offer many suggestions for variety. I don't eat canned veggies all that much either. I think frozen tastes better and its just as easy to make. I just discovered hummus too and I love it.
