Guest guest Posted November 13, 2006 Report Share Posted November 13, 2006 Candied Sweet Potatoes 4 medium sweet potatoes, peeled and cut into 1 " slices 1/4 cup orange marmalade 2 TB honey 1 tsp. grated lemon peel 1/2 tsp. ground ginger 1/4 tsp. salt 1/8 tsp. ground white pepper 2 tsp. margarine or butter, cut into small pieces Parsley sprigs for garnish Preheat oven to 375° F. In a large sauce pan, bring sweet potatoes and enough water to cover to a boil over high heat. Reduce heat to medium and cook until tender, about 15 minutes. While sweet potatoes are cooking, in a small sauce pan over medium heat, combine marmalade, honey, lemon peel, ginger, salt, and pepper. Mix well. Bring marmalade mixture to a boil, stirring constantly. Remove from heat and set aside. Drain sweet potatoes in a colander. In a large baking dish, arrange potatoes in a single layer. Pour marmalade mixture over top; dot with margarine. Bake until sweet potatoes are candied and golden brown, about 20 minutes. Garnish with parsley. Serve immediately. Serves: 6.
