Guest guest Posted November 12, 2006 Report Share Posted November 12, 2006 Tropical Fruit Salsa on Ice Cream 1 pineapple, peeled and cored 1 mango, peeled and cut off the pit 1 papaya, peeled and seeds removed 1 pint strawberries, stemmed 1 small serrano chile, stemmed and seeded 1 tbsp. brown sugar 1 tbsp. fresh mint leaves, thinly sliced 1 tbsp. passion fruit juice Cut pineapple, mango, papaya and strawberries in a small even dice. Finely mince the Serrano chile. Toss the fruit and chile with the sugar. Fold in the mint and juice to coat. Chill until ready to serve. Serve on top of ice cream.
