Apple Eggnog Bread

 

1/2 cup of butter or margarine

1 1/4 cup of sugar

2 eggs

2 cups of all-purpose flour

1 teaspoon of baking soda

1/4 teaspoon of nutmeg

1/4 teaspoon cardamom

1/2 cup of eggnog (soy eggnog is fine)

1 big apple, peeled and finely diced

1/2 cup of chopped walnuts

 

 

Preheat oven to 350ºF. Grease 2 (8 x 4 x 2 1/2-inch)

loaf pans. Cream butter, sugar, and eggs. Mix dry

ingredients in another mixing bowl, add alternately

with eggnog. Beat for 2 minutes with an electric

beater at moderate speed.

 

Stir in diced apple and walnuts. Pour batter into

prepared pans. Bake for 40-50 minutes or until done.

*Keeps well when refrigerated for a few days.*
