Guest guest Posted November 9, 2006 Report Share Posted November 9, 2006 Crock Pot Berry Bread Pudding 6 cups sourdough or crusty bread, cut into 1 " cubes 1/2 cups almonds, sliced 1 cup raisins 6 large eggs, beaten 1-3/4 cups milk 1 tsp. vanilla extract 2 cups packed brown sugar 1-1/2 tsp. ground cinnamon Garnishes: 3 cups fresh strawberries, sliced 2 cup fresh blueberries Fresh mint leaves, optional Grease the inside of a crock pot with nonstick cooking spray or butter. Add bread cubes, nuts and raisins in the crock pot. In a separate bowl, whisk together the eggs, milk, vanilla, sugar and cinnamon. Pour this mixture over the bread cubes in the crock pot. Cover and cook on LOW heat setting for 4 to 4-1/2 hours or on HIGH heat setting for 3 hours. Remove stoneware liner from crock pot, and allow pudding to cool.
