She makes it often, in fact she has it baking in the oven tonight when we chatting. She said the house smelled wonderful. I can't wait to make it. Enjoy, Judy Rich Pumpkin Cheesecake Crust 1 package Spice cake mix 1/2 cup butter or margarine, melted Filling 3-8 ounce packages cream cheese, softened 1 can sweetened condensed milk 1-16 ounce can pumpkin 4 eggs 1 tablespoon pumpkin pie spice Topping 1 package-2 1/2 ounces sliced almonds 2 cups whipping cream, chilled 1/4 cup sugar 1. Preheat oven to 375 2. crust- Combine cake mix and butter in large bowl; press into bottom of ungreased 10 in. springform pan. 3. Filling- Combine cream cheese and sweetened milk in large bowl. Beat with mixer at high for 2 min. Add pumpkin, eggs, and pie spice. Beat at high speed 1 min. Pour over prepared crust in pan. Bake 375 65 to 70 min. or until set. Cool completely on rack. Refrigerate 2 hours. Loosen cake from sides of pan... remove sides of pan. 4. Topping- Preheat oven to 300. Toast almonds on sheet for 4-5 minutes, or until fragrant and light brown. Cool completely. Beat whipping cream in med. bowl with mixer on high speed until soft peaks form. Gradually add sugar'; beat until stiff peaks form. Spread over top of chilled cake. Garnish with toasted almonds. Refrigerate until ready to serve. 8-12 servings To prepare in 13x9 pan, bake at 350 35 minutes. Enjoy... sometimes when i am in a hurry, i buy redi whip extra creamy.. instead of the whipping cream.. I will try to work this into the Thanksgiving dinner this year. I will have my nephews wife helping me cook and she loves to make desserts.
