Cook lots of wild rice or even white rice...heck mix it. Veggies and rice are sooo good. Same with noodles! You can use leftovers for a yummo soup or hash! Oddly enough, I don't see it as a hard thing at all. I am here because I love to cook, I love to eat, and I have never eaten tofu (soy makes me a little ill). The more recipes I can find (and share) that make the vegetarian way of life a pleasure then I'm happy. So... any hints, tricks or tips for the newbie? (I glanced at the files, it's going to take me a while to go through them so I thought I'd say hi first.) You basically just eat all the fruits, veggies and grains that you have always eaten and maybe now is a good time to try new veggies you never had before. Because you just started you have a lot of stores in your body of the nutrients you consumed when you were eating meat. It won't be until your body uses all that fuel that you will start to crave the things you used to eat. You'll crave them not because you " loved them oh so much " but rather because they contained vitamins, minerals, enzymes and nutrients that your body needs and you were used to getting those things from that diet. So thats when you need to learn how to compensate- so for example if all of a sudden you start to crave a juicy steak or a hamburger- thats just your body telling you it needs protein and iron- so if you eat something vegetarian that has lots of protein and iron then the meat craving goes away. Eventually your body will crave the new vegetarian food over the old carniverous food. Its just a matter of time for reprogramming your body and brain to make new associations between food and the purpose it serves.
