Guest guest
I just took my last batch of these cookies out of the oven. My daughter and I usually make them on Sunday's and she brings them to school during the week. All her friends love them. Since she and I spent the day in Boston yesterday and I home from work today I promised her I would make them. I have finally finished playing with the recipe and wrote it down. 1 Cup butter 1 cup brown sugar firmly packed 1/2 cup granulated sugar Ener-g egg replacer equal to 2 eggs 1 tsp vanilla 1 cup white flour 1/2 cup whole wheat flour 3/4 cups ground almonds 1/4 cup ground flax seeds 1 tsp baking soda 1 tsp salt 3 cups oatmeal Chocolate chips dried blueberries dried cranberries Heat oven to 350 degrees In large bowl beat together butter and the sugars until creamy Add eggs and vanilla beat well. In a medium bowl combine sifted flours, baking soda, cinnamon, salt, ground flax seeds, and ground almonds. Mix to combine Add dry ingredients to butter mixture. Stir in oats Add blueberries, cranberries and chocolate chips Drop by tablespoonfuls on to parchment paper lined cookie sheets. Bake 8 to 10 minutes Cool on cookie sheet for 1 minutes Remove to cooling racks. Eat and enjoy. Gayle
Guest guest
This sounds good. I like the combo of nuts, fruit and chocolate with the oatmeal. Thanks.
