It's a perfect brown-bagger for those who are always on the run. 1 TB peanut butter 1 TB part skim ricotta cheese 3 or 4 apple slices 1 whole wheat English muffin Combine peanut butter and ricotta cheese with a fork until well blended and creamy. Spread on English muffin. Top with apple slices. Serves: 1 Nutrition Information: Per serving = Calories 277, fat 10 g, saturated fat 2 g, protein 12 g, carbohydrate 37, sodium 512.
