I think organic omega three eggs are the healthiest and least taxing

to the enviorment animal foods out there, period. Of course it's also

reasonable for most of us to raise our own chickens as pets, and eat

the moderate number of eggs they produce. They are always the best and

tastiest of course.

 

My best friend though,may not eat eggs, for religious reasons. We are

always at amicable odds, you might say, on the issue. The Harre

Krishna technique for replacing the demon egg in baked goods, is to

use two tablespoons of (whole milk organic) yogurt for each egg called

for in a recipe. He swears by it. You might also experiment using thick

greek yogurt, yogurt " cheese " (strained overnight), or raw milk organic

yogurt if you have access to it. Happy baking.

I know alot of people eat eggs, I would if I could, it's not an option for me

but you are right the omega 3's are the healthiest eggs around. Judy H
