Of course it's also reasonable for most of us to raise our own chickens as pets, and eat the moderate number of eggs they produce. They are always the best and tastiest of course. My best friend though,may not eat eggs, for religious reasons. We are always at amicable odds, you might say, on the issue. The Harre Krishna technique for replacing the demon egg in baked goods, is to use two tablespoons of (whole milk organic) yogurt for each egg called for in a recipe. He swears by it. You might also experiment using thick greek yogurt, yogurt " cheese " (strained overnight), or raw milk organic yogurt if you have access to it. Happy baking.
