Guest guest Posted October 22, 2006 Report Share Posted October 22, 2006 Peach Casserole Pancake 8 Servings 1/4 cup margarine or butter 1 cup Bisquick 3/4 cup milk 4 eggs or 8 egg whites or replacer 2 medium peaches, peeled and thinly sliced or 1 1/2 cup canned (drained) 1/4 cup sugar 1/4 tsp cinnamon Honey Raisin Sauce (recipe below) Heat oven to 400°. Place 2 Tbsps margarine in each of 2 9 " x1 1/4 " pie pans. Heat in oven until melted. Beat baking mix, milk, eggs. Arrange sliced peaches in each pie pan. Divide butter evenly between pie pans. Mix sugar and cinnamon and sprinkle over batter. Bake uncovered 20-25 minutes or until brown. Cut and serve. Honey Raisin Syrup 1/2 cup honey or maple syrup 1/4 cup raisins 1/4 cup margarine or butter 1/4 tsp cinnamon Heat all ingredients over medium heat. Pour over pancakes when ready to serve.
