Mind if I come over for a squash buffet? hehe. Everything you described sounds

yummy.

Squash - all kinds. I have been eating them nonstop.

Butternut is my favorite but I've also been eating

acorn, carnival and delicata. I like them very

simple, baked with a little brown sugar (okay, Splenda

Blend brown sugar), cinnamon and sometimes butter if I

remember to put it on. Sometimes I'll stuff them with

an apple-cranberry-walnut mix. Sometimes with wild

rice. Sometimes have maple syrup in there.

This is in response to Liz's posting about ODing on squash. Last week I finally

decided t purchase a few goards and one that I chose had a sticker on it saying

" Sweet Potato " which I didn't notice until I got home. The goard/squash is the

size of a child's football. It is yellowish/green flecked and has stripes like

some watermelons going from end-to-end. Do I dare eat it? Anyone ever seen

one? I don't know what to do....help Luanne

That's a delicata squash and it's delicious! I had

that one for the first time recently. When I was

buying it a woman who was also getting some told me

that the skin is edible, but I didn't eat it. It

still seemed to thick to taste good so I just scooped

out the flesh as usual.

I had butternut squash with lunch today. Squash

totally takes care of any cravings I have for starchy

foods like potatoes, but has fewer carbs and calories.

I love sweet potatoes but have easily passed them over

in favor of squash.

 

I feel like I should try some other recipes using

squash, like soups or stews, but I enjoy eating them

as is and just haven't looked into trying anything

else.

Luanne, My wife brought one home the other day and I just chopped it up and

threw it in with the rest of the squash soy sauce and I added a little mapke

syrup to this batch and it was very tastee . bill
