Guest guest Posted October 15, 2006 Report Share Posted October 15, 2006 Vegetarian Appetizers Add to a food processor: 2 cups fresh cilantro, lightly packed 1/4 cup fresh mint leaves 1 fresh jalapeño pepper, seeded and chopped 1 TB lime juice 1 tsp. sugar 1/2 tsp. fresh ginger, grated 1/4 cup salted peanuts 1 to 2 TB water Pulse until smooth. 20 baguette slices, toasted, cut 1/4 " thick slices* Garnishes: 3/4 cup cucumber, peeled, seeded and diced 5 cherry tomatoes, quartered Mint sprigs, optional Spread one side of each toasted baguette slice with some of the veggie mixture. Garnish with cucumber, tomatoes and mint. Makes 20 appetizers. *To toast bread slices: Lightly brush both sides of bread slices with olive oil (3 to 4 TB total). Arrange in a single layer on a 10 " x 15 " jelly roll baking pan. Broil 4 to 5 inches from heat for 1 to 2 minutes or until lightly browned. Turn over bread slices.
