(*recipe) La Madeleine's Tomato Basil Soup

I've been making this soup for years. This recipe

turns out wonderfully every time I make it and it

tastes exactly like it does in the restaurant.

 

La Madeleine's Tomato Basil Soup

 

4 cups (8 to 10) tomatoes, peeled, cored, and hopped,

or 4 cups canned whole tomatoes, crushed.

4 cups tomato juice or part tomato juice and part

vegetable or chicken stock

12 to 14 washed fresh basil leaves (I've used 2-3 tsp.

dried when i couldn't get fresh basil)

1 cup heavy cream

1/4 pound sweet unsalted butter (1 stick)

salt to taste

1/4 teaspoon cracked black pepper

 

Combine tomatoes, juice or juice and stock in

saucepan. Simmer 30 minutes. In blender or food

processor, puree mixture, with basil leaves added in

small batches.

Return to saucepan. Over low heat, stir in cream and

butter. Add salt and pepper. Garnish with basil

leaves and serve with your favorite bread.

 

Serves 8

 

Nutritional information per serving:

248 calories, 23 grams fat, 672 milligrams

cholesterol, 4 grams protein, 457 milligrams sodium,
