Guest guest Posted October 14, 2006 Report Share Posted October 14, 2006 lentil and barley stew 2 tablespoons olive oil 2 carrots, diced 3 ribs celery, diced 2 medium zucchini, diced 1 large onion, diced 2 cloves garlic, minced 1/2 teaspoon dried thyme 1/2 to 1 teaspoon ground cumin 1 cup dried lentils, picked over and rinsed 1 cup pearled barley, rinsed 6 to 8 cups vegetable broth salt and pepper heat the olive oil in a large pot over medium heat. add the carrots, celery, zucchini, onion, and garlic and cook, stirring, until tender. add the thyme, cumin, lentils, barley, and 6 cups of vegetable broth. bring to a boil. reduce heat to medium and simmer uncovered for 30 to 40 minutes. season with salt and pepper. if the stew seems a bit dry, add the remaining cup or 2 of vegetable broth. serve in bowls with crusty bread and a green salad.
