Guest guest Posted October 7, 2006 Report Share Posted October 7, 2006 This is a good semi sweet bread. Not must oil in it and not too sweet. The lime zest really makes the recipe. Donna Lime Bread 3 cups of flour 3/4 cup sugar (I used raw) 3 tsps. baking powder 1 tsp. salt 1/4 tsp. baking soda 1 1/2 cups unsweetened soy milk or milk 1 large beaten egg 1/4 cup vegetable oil 1/4 cup lime juice 2 tsps, grated lime peel (zest) Preheat oven to 350 degrees grease a 9-inch loaf pan or an 8 1/23-inch loaf pan and 2 small mini loaf pans In a bowl mix together flour, sugar, baking powder, salt and baking soda. In another bowl mix milk, egg, oil and lime peel with 1/4 cup lime juice, beat with a wire whisk. Add dry ingredients and stir to mix until moistened. Turn into prepared loaf pan and bake about 45 minutes, until toothpick inserted comes out clean. Remove from pan and cool on wire rack. **Note- 1/2 cup chopped nuts is good in this also.
