I have always wondered about how to use the pumpkin. I assume one would eat

the part under the tough skin but other than pie (and now pancakes) what can you

make with a " real " pumpkin?

Autumn Pumpkin Pancakes

 

2 cups all-purpose flour

2 Tbsp. brown sugar

1 Tbsp. baking powder

1 tsp. salt

1 tsp. ground cinnamon

1/4 tsp. ground nutmeg

1/4 tsp. ground ginger

1 3/4 cups milk or soy milk

1/2 c. pumpkin puree, fresh or canned

1 large egg

2 Tbsp. vegetable oil

1 1/2 cups maple syrup warmed

 

Mix flour, sugar, baking powder, salt, & spices.

In a small bowl combine milk, pumpkin, egg, and oil.

Combine wet and dry ingredients. Cook as usual in hot

oiled skillet.
