Guest guest Posted October 5, 2006 Report Share Posted October 5, 2006 1 c. butter, softened 1 3/4 c. sugar (I used raw) 2 c. mashed very ripe bananas 4 lg. eggs, well-beaten (I used 4 tbsp. milled flax and 12 tbsp. water instead) 2 tsp. baking soda 2 1/4 c. flour (I used whole wheat flour) Cream butter and sugar. Add bananas and eggs. Combine soda and flour, add to banana mixture. Stir by hand only until moistened. Pour batter into two sprayed 9 " X5 " loaf pans. Bake at 350 degrees for 50-55 minutes. I've got this in the oven right now. Boy, will Jeff be pleased! I've made this before and it is excellent, though I'm using the raw sugar, whole wheat flour, and flax for the first time. Kadee Sedtal, who has listened to Schubert's Die Schone Mullerin at least 50 times today, which is nowhere near enough! Everyone is raving about the all-new Mail.
