Guest guest Posted October 5, 2006 Report Share Posted October 5, 2006 It's that time of the year for my favorite pancakes. ~G~ Autumn Pumpkin Pancakes 2 cups all-purpose flour 2 Tbsp. brown sugar 1 Tbsp. baking powder 1 tsp. salt 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1/4 tsp. ground ginger 1 3/4 cups milk or soy milk 1/2 c. pumpkin puree, fresh or canned 1 large egg 2 Tbsp. vegetable oil 1 1/2 cups maple syrup warmed Mix flour, sugar, baking powder, salt, & spices. I assume one would eat the part under the tough skin but other than pie (and now pancakes) what can you make with a " real " pumpkin? I have reduced the eggs to 3 in that recipe and I like it better. It makes 2 1/2 dozen, so there are plenty to share with a neighbor or co-workers.
