Guest guest Posted September 24, 2006 Report Share Posted September 24, 2006 Apple Cut the Calorie Pancakes (they are still delicious) 1 cup grated peeled fresh apple 1 teaspoon lemon juice 1 tablespoon honey 7 egg whites 1 cup low fat cottage cheese 1 cup flour 1 teaspoon cinnamon 1/2 teaspoon salt In large bowl, mix apple, lemon juice, honey, egg yolks, cottage cheese, flour, cinnamon and salt together. Beat egg whites until stiff. Fold egg whites into batter. Pour pancakes, approximately 3 inches in size, on greased hot griddle and fry until brown on both sides. Guest guest Posted September 24, 2006 Report Share Posted September 24, 2006 To add even more good things to these pancakes, replace the 1 cup of regular flour with 1 cup of oatmeal that been whizzed in a blender to make flour. I make cottage cheese/oatmeal pancakes all the time. They dont rise very high but are absolutely delicious! I make enough for the entire week by freezing 2 per package and grabbing them as I go out the door.
