Guest guest Posted September 19, 2006 Report Share Posted September 19, 2006 Diabetic Cake And Chocolate Frosting 3/4 c Diet margarine 1 1/2 c Non-nutritive sweetener, -Sugar Twin is best for this 4 tsp. Baking powder 1/2 tsp. Salt 3 c Flour 1 c Skim milk 1 tsp. Almond extract 3/4 c Egg whites (4-5) Preheat oven to 375 F. Cream margarine and sweetener. Sift baking powder, salt, flour, then add alternately with skim milk to creamed mixture. Add almond extract, and beat egg whites until stiff peaks form, and fold in. Pour into 2 well-greased 9 " layer pans. Bake about 30 minutes. Cool a few minutes, then remove from pans and cool further on wire racks. Top with Creamy Frosting. Makes 1 two layer cake. Sugar Free Chocolate Frosting Chocolate Frosting-Sugar Free 12 servings 1 package Dream whip (1 envelope) 1/2 teaspoon Vanilla 1/2 cup Skim milk 1 (2 oz.) package Sugar-free chocolate Pudding Blend together skim milk, vanilla, and dream whip (or sugar-free whipped topping mix). Beat til stiff. Add pudding mix and continue to beat until light and fluffy. Add more skim milk if too thick. Use as frosting on low fat cupcakes using 1Tbl. per cupcake.
