Guest guest Posted September 18, 2006 Report Share Posted September 18, 2006 Creamy Fruit Topped Waffles 3/4 cup 1% low fat cottage cheese 1 medium peach, peeled and chopped 1/2 cup canned pineapple, cubed 4 medium frozen waffles 1/2 tsp. cinnamon sugar In a small food processor or blender, process cottage cheese until almost smooth; transfer to a small bowl and stir in fruit. Prepare waffles according to package directions. Spoon about 1/2 cup of fruit mixture over each waffle, sprinkle each with a pinch of cinnamon sugar and serve.
