Mighty Mouse Mac and Cheese

 

1-1/3 cups (bout 5 oz.) dried corkscrew pasta or elbow macaroni

1/4 cup nonfat dry milk powder

1/4 cup finely chopped onion

2 TB all purpose flour

1/4 tsp. salt

1-1/2 cups milk

10 slices (7 oz.) reduced fat American cheese, torn

6 flavored (1 oz. total) crisp breadsticks, such as cheese or garlic, crushed

 

 

Cook pasta according to package directions. Drain; set aside.

 

In a medium saucepan stir together the milk powder, onion, flour, and salt.

Gradually stir in the milk

until mixture is smooth. Cook and stir over medium heat until thickened and

bubbly. Reduce heat to

low. Add the cheese, stirring until melted. Stir in the pasta. Spoon mixture

into a 1-1/2-quart casserole.

 

Bake, uncovered, in a 350º F., oven about 25 minutes or until bubbly,

stirring once and topping with

crushed breadsticks after 15 minutes. Let stand 5 minutes before serving.

 

Makes 4 servings.

What a cute name for this recipe!

I used to love watching Mighty Mouse when

I was a kid and my favorite sweat shirt when

I was 10 had a Mighty Mouse on the front.

Sounds yummy too.

Who doesn't love mac & cheese? *lol*
