Guest guest
These are a wonderful addition to any soup or stew. They are moist and golden in color, yet light and you can't stop eating them. The recipe is one I tried from Vegan Planet cookbook. It is a really good one with great recipes and info. Pumpkin Biscuits 2 cups all-purpose flour 1 Tbs baking powder 1/4 tsp salt 1/2 tsp ground allspice 1/4 cup canned pumpkin 1/2 cup soy milk or other dairy-free milk 3 Tbs corn oil 1 Tbs pure maple syrup Preheat the oven to 450 degrees. Lightly oil a baking sheet and set aside. In a large bowl, sift together the dry ingredients. In a smaller bowl combine the moist ingredients and blend together until smooth. Combine both mixtures together, stirring until the dough is just mixed and hold together. Transfer to a lightly floured surface and roll out to about 1/2 inch thick. Using a biscuit cutter or small drinking glass, cut the dough into 2-inch rounds and place on the prepared baking sheet. Reroll dough scraps and cut out more biscuits. Bake on the center oven rack until golden brown on top, 12 to 14 minutes. Serve hot. Yield: about 20 biscuits ~ PT ~ My experience is that everything is bliss. But the desire for bliss creates pain. Thus bliss becomes the seed of pain. The entire universe of pain is born of desire. Give up the desire for pleasure and you will not even know what is pain. ~ Nisargadatta Maharaj
